The 4th of July is just around the corner and we’re all amping up for a celebration! Whether a barbecue or a picnic is in the works, dessert is foremost on my mind and this year I have the cutest, no-bake idea for you with these Marshmallow Bald Eagles! Grab the kids and make a batch of these just in time to celebrate the birth of our great nation.
Marshmallow Bald Eagles
Makes: 1 dozen
Prep: 15 mins
Ingredients
1 cup milk or dark chocolate, melted
12 cookies
12 jumbo marshmallows
1/4 cup vanilla icing
1/2 cup shredded coconut
24 mini chocolate chips
12 whole cashews or yellow/orange candies (like M&Ms or Reeses Pieces)
Instructions
Melt chocolate chips in 30-second bursts in the mic.
Dip each cookie into the melted chocolate and coat completely.
Pierce each marshmallow with a toothpick, somewhere toward the top.
Cover each marshmallow in icing and dip into a bowl of shredded coconut.
Insert a cashew or candy into the hole for the beak.
Add two mini chocolate chips for eyes.
Set marshmallow head onto a chocolate-covered cookie.
Repeat, then transfer these cuties to the fridge for 15 mins to harden.

Dear Colette, these are indeed the cutest Bald Eagles ever! Cookies, chocolate, marshmallows, cashews and coconuts and more chocolate are always good together. I just know that the kids and their friends would adore them! Now, to find a suitable occasion for making them…
Hope you all had a wonderful July 4th celebration!
