The Gold Rush

The California gold miners didn’t know it at the time, but had they been planting theobroma trees instead of panning for gold, they’d become much richer men.

Hindsight’s always 20/20.

At least we know now.

With a food processor and some basic ingredients, you can make your own chocolate nuggets.

Here’s what you’ll need:
   Batter:
     1 cup sugar
     1/3 cup cocoa powder
     2 cups flour
     pinch baking soda
     double pinch baking powder
     2 sticks butter, mildly melted

Glaze:
1 cup Confectioner’s sugar
Various extracts or flavourings to your liking
(Nutella, peppermint extract, almond extract, vanilla, instant coffee, Framboise or raspberry jam)

Toss all the dry ingredients into the food processor first and give them a whirl.
Then pour the melted butter and you’ll get a rich, chocolaty paste of batter, like this:

 Next, roll tablespoons of the batter into cute li’l golf balls and
space onto a parchment-lined baking sheet, about an inch apart. {If you’re squeamish, wear gloves, but butter is the best moisturizer for squeaky clean hands.}

Bake at 325*F for about 15 minutes.
While the tasty nuggets are in the oven, prepare the glaze with confectioner’s sugar.
I tried several simple flavours: minty (added peppermint extract & a touch of green food colouring)
and raspberry (just added seedless raspberry jam) and coffee (a bit of instant coffee dissolved in some warm water).
Go crazy, create your own glaze. Think of what likes chocolate: Orange, caramel, pistachio, even red wine??
Once cooled, dip the top of the cookies into your glaze and 
let them rest to solidify. Arrange them onto a pretty plate to tempt your guests.
They also make wonderful gifts,
if you’re willing to part with them.
