The Basics

*Taste as you go.
  Never leave anything to chance. Season where needed.

*Wash while you cook.
  During little intermissions, like when you’re waiting for the onions to brown. The last thing you want after slaving at the stove is a huge mess to clean up.

*Save the planet: Recycle everything!
  Wash plastic & glass to use for storing leftovers. Old yogurt containers and jam jars are what we Aunt Seda calls Armenian Tupperware.

*Experiment in cooking. Give recipes your own touch, but quality-control your creations.

*Don’t experiment in baking.
   Follow the measurements accurately.I learned this from my sister Nathalie who’s the master baker in the family.

*Never serve a new recipe to guests.
  Nathalie’s taught me this. Tried & true is the best way to make a good impression.

*Enjoy the process.
  Listen to good music, sip some wine or a good cup of coffee while you cook.
  If you’re not in a good mood when you cook or bake, it will show in the first bite.
