Jammie Independence Cakelets

Armenians love to celebrate and any excuse to have a party is a good one.
So, now that July 4th is looming, I’m anxious to celebrate being free. Never take freedom for granted. Try to enjoy the li’l moments of happiness in each day. And, if you can’t find one,
bake it!

Yes, yes, I know, bikini season is coming and you’re trying to keep that waistline in check. So, don’t bake a whole cake. Make a cakelet. One of these li’l sweeties is just enough to put a proud smile on your face when you salute that beautiful flag and all those military folk who sacrifice so much for the rest of us.

Jammie Independence Cakelets
Makes 12 cupcakes

Luscious Batter:
1 stick butter, at room temp
3/4 cup sugar
1 free-range egg
splash of good vanilla
1/2 cup milk
1 1/2 cups flour
1 1/2 tsps baking powder
pinch salt
1 cup berries, fresh or frozen

Crumble Topping:
1/4 almonds
pinch of Ahmad Aromatic Earl Grey Tea
2 TB butter
2 TB sugar
1/4 flour

Grind all the ingredients together. Save the excess (if any)
in the fridge for later.

Preheat oven to 350*F

Sift the dry ingredients.
Blend butter + sugar in a mixer or food processor.
Add the egg,a splash of good vanilla and the milk.
Add the dry ingredients and mix gently until just smooth.

Divide the luscious batter among the cupcake molds.
Top with a few chopped strawberries.
Sprinkle a pinch of the tea-almond-shortbread crumble.

Bake for about 30-40 minutes.
When you can smell the cupcakes, they’re ready!

You might want to skip the crumble topping if you’re in a hurry to eat
one of these baby cakes and, believe me, you’re gonna be in an awful hurry!
