Chocolate Daisy Cupcakes: A GIVEAWAY!

I don’t trust people who don’t like chocolate.
Is that wrong?

This is my first not-from-scratch batch
and I’m feeling guilty.

I didn’t have a lot of time and my neighbour’s kids wanted chocolate cupcakes.

I decided they did.

Ok, YES, I was looking for an excuse to bake.
But, everyone knows that sharing makes eating sweets less fattening.

It’s a proven scientific fact.
Perception is everything.


So, I grabbed a.

A few extra touches made the cupcakes extra-special.
A splash of good vanilla smelled like home. A spoonful of luscious ganache and an sparkly daisy added Parisienne charm.

The rest was easy. Here’s how…

The Cake:
1 box Pillsbury Chocolate Cake Mix
2 eggs
1/2 stick butter, melted
2 tsp vanilla

The Frosting:
Ganache
3 Tb coconut flakes, ground to powder (optional)


Follow the box instructions to make the cake. Substitute melted butter for the vegetable oil and you’ll get a richer flavour.
Don’t forget the good vanilla.

The ganache topping is very easy and can be made ahead of time. It does well in the fridge, stored in a clean, glass jar for up to a week.
If you do have some already made, gently warm the jar in a water bath or 20 seconds in the microwave to soften it to a spreadable consistency.

I added coconut flavour to mine by using a coffee grinder to take coconut from flakes to powder and mixing a few tablespoons into the ganache.





Do your own thing.
Add mint extract to the ganache or mix a few tablespoons of peanut butter, toasted almonds, etc. I also like to add some of my favourite chocolate chunks from www.appletonsweets.co.uk as decoration as I just can’t get enough of them and there’s no such thing as too much chocolate!
Let your imagination run the show. Then, enlist some faithful volunteers to help taste-test your experiments.

I boxed some of the pretty li’l things to take to my neighbour’s house.

One didn’t make it into the box.
So, Daisy got it!

You can guess what happened to the rest of the cupcakes…



Whatever you do, these cupcakes will make you look like a rockstar.

    Very cute cake stand! I'm going to start deciding people need cupcakes too since I want to bake, but can't eat them on my pre-wedding diet!

    people who aren't obsessed with chocolate like I am aren't trustworthy!

    The reason i do not bake much ๐Ÿ™‚ but I like your idea of sharing.. only that does not happen soon enough! who does not like chocolate? the ganache looks divine!! and Daisy is really cute:) and she is already posing for you!.
