Cola Chip Blondies

02/18/15 | cookies, GIVEAWAY, healthy, old fashioned, stevia

My best homemade cola syrup recipe got a supermodel makeover with this all-natural sugar and, because it tasted fabulous, I plastered the recipe here so you can see for yourself. Just add some bubbly, like sparkling mineral water, club soda or seltzer for a guilt-free soda pop with an old fashioned taste. Then, because we’re wild and crazy guys (Remember Steve Martin in SNL?!), we are going to kick things into high-gear and use that same cola syrup to make Chocolate Chip COLA Blondies! Yes, we are going to bake with this yummy potion.  Everything you need is probably waiting for you in your pantry and fridge.

If you are a super health nut, you can forget the sugar altogether and use stevia which is a plant. You can literally dunk the leaves into your drink to add natural sweetness. Stevia is widely available these days even at Trader Joe’s and comes in either a syrup or powder form.

Since you know a gal (me) who knows a guy, it’s a snap getting everything you need to tame that sweet-tooth. Ditch the sugar for stevia for an all-natural sugar-free edition. Here’s how!

homemade colaCola Chip Blondies
Makes about 15 1″ square bars

Ingredients

1 1/2 sticks butter
3/4 cup sugar
1 free-range Grade A egg
1/4 cup cola syrup
2 cups flour + 1 Tb
pinch salt
1 cup dark chocolate chips
2 tsp baking powder

Instructionshomemade cola
Line an 8″ x 8″ square brownie pan with aluminum foil.
Butter the foil and set aside.
Sift flour, salt, baking powder and set aside.
Cream butter and sugar until light and fluffy.
Add the eggs.
Slowly incorporate the cola syrup.

Sprinkle 1 tablespoon of flour over the chocolate chips and give them a good toss to coat.

Set aside.

Reduce the speed of your mixer and add the flour mixture, a bit at a time.

Do not overwork the flour otherwise your batter will toughen.

Preheat oven to 350*F.

Add the chocolate chips and mix by hand.

Drop the dough into the prepared brownie pan, smooth the top and
bake 25-30 minutes.

Remove from oven and wait 10 minutes.

Lift the foil out of the pan. Cut bars into 1″ squares.
Arrange onto a pretty plate and serve.

I have never thought to make my own cola – thanks for sharing this recipe. I have a stevia plant in my garden 🙂

I crack pumpkin seeds open faster than a South American parrot. That line is freaking hysterical! I am still coming to terms with Stevia. Was a bit bitter for me in the aftertaste. Today I tried Vitamin water- we dont drink soda at all but I was out with my daughter for lunch and thought I would try it. It was okay but happily no bitter after taste. So I think I will be using a bit more stevia around here.
